Easy & Healthy Lunch Ideas

I am so glad to have Hannah Holzum from Wholesome Nutrition Co. back with another blog post! Ever since we got back from vacation and entered a seemingly endless cycle of sickness, I have struggled to plan healthy lunches for myself. I’m planning on using a few of her go-to recipes to get me back on track and hope they help you as well!

Hi. My name is Hannah. I’m a registered dietitian. And I hate planning my lunches. I really don’t even like taking the time away from work to sit down and eat lunch. Can you relate? As a registered dietitian, I know how important it is to fuel your body consistently throughout the day. But it still takes a conscious effort to step away from my desk and go make a healthy lunch! Do you struggle with that too? 

Or maybe you find yourself packing beautifully balanced, nutritious lunches for your kids but when it comes to packing yours, you think to yourself that you’ll just worry about it later. I’ve been there too!

It’s crucial to eat a balanced and healthy lunch for so many reasons but here are just a few!

  1. It helps stabilize blood sugar. Unless you have diabetes, you may not give your blood sugar much thought at all! Our bodies do a really great job at managing our blood sugars throughout the day whether we’re eating all day long or haven’t had a bite to eat. What we eat greatly impacts our blood sugar; when you don’t eat, your blood sugar may dip low. Guess what happens when your blood sugar gets a little low? You crave carbohydrates and simple sugars. Guess what doesn’t fill you up very well or for very long? Simple carbohydrates and sugars. Eating “balanced” means making sure you have a good variety on your plate such as a protein source (think chicken, fish, tofu, edamame), carbohydrate source (potato, whole grain bread, fruit), and healthy fats (nuts, avocado, olive oil) as well as a good serving of colors and fiber like fruits and vegetables. 
  2. It minimizes the afternoon slump. This kind of comes back to blood sugar, really! If you are skipping meals or just grabbing a bag of chips for lunch, that energy will wear off quickly. The three most common culprits for the afternoon slump are dehydration, not eating enough or balanced enough at lunch, and lack of movement. So make sure you drink a large glass of water and get a well balanced lunch and see if it improves your afternoon slump! Plus if you’re running kids around to practices in the afternoon/evening, you need all the energy you can get!
  3. It helps us not overeat later in the evening. As a dietitian who has coached thousands over the years, I see this happen all the time. Many people stay really busy at work and either forget to eat or don’t take the time to eat a balanced lunch. Then they get home and they are ravenous. They may find themselves eating the scraps off their kids’ plates, eating more sweets than normal, and definitely finishing off the evening with a big bowl of cereal. The more you can spread out your nutrition and eat more in the first part of the day, the less you are going to naturally eat in the evening.
  4. It gives us energy to keep our workday flowing. Have you ever noticed how you are usually most productive in the first part of your day? Have you thought about why that might be? Sure, maybe the strong coffee gave you some extra energy, but chances are if you find yourself in a spot where you haven’t eaten in more than 4 hours, your body probably needs some real fuel, like lunch or a snack. Try eating more at lunch and add a snack if you need to, maybe even take a walk, and watch those energy levels improve in the afternoon!

Here are a few ideas for some easy, balanced lunches that will keep you nourished and feeling good throughout your afternoon!

Quick and Easy Items to Keep On Hand

  1. Lightly breaded chicken tenders or pre-cooked chicken. I love the Perdue brand on the chicken tenders but several companies now have a lightly breaded option. I like to throw these in the air fryer (they bake well in the oven too!) and eat them plain, throw them in a wrap, or cut up and put on a salad. Rotisserie chicken or cooking up some chicken breasts ahead of time can really help lunchtime go quicker!
  2. Bagged salad mix. If you have a good protein like chicken or tuna, you can easily throw that on top of a salad for a quick meal. 
  3. Frozen meals. You have to be careful to check the nutrition label, but there are some decent options when you’re in a pinch! The Whole & Simple brand from Aldi is a great one! Amy’s and Applegate are two other brands you can usually find at Target or your local grocery store that use good ingredients as well. Frozen meals are typically high in sodium so if you have high blood pressure, you may want to find another meal option. 
  4. Chopped and washed fruits and veggies. Let’s be honest. Are you really going to wash and cut up that box of strawberries in the fridge right before you want to eat them? Are you going to peel and chop those carrots when you’re already starving and ready to eat right that moment? No, probably not! If you can wash and cut everything up immediately when you get home from the grocery store, the chances of you eating it later will go up! These are easy to add on as sides for your lunch.
  5. Food Prep for Leftovers – This is probably my go-to when it comes to lunches. I love a hot lunch so this is my preference! If you’re a meal-prep kind of gal, I’d suggest making a big dish like a casserole or a soup to eat for lunches throughout the week. If you’re not into meal-prepping, consider making an extra portion at dinner time to save for lunch the next day.

Spring is on its way and Easter is right around the corner! I’ve rounded up some of my favorite Easter basket items so you’re ready Easter morning. We all know how much I adore wicker and that extends to Easter baskets. What I love most is that you can use them for other purposes when it’s not Easter. The fabric baskets are perfect for Easter egg hunts and are a bit easier for smaller kids to carry around with them. Plus, you can spot-clean them if any candy or chocolate falls out of its egg.

Easter Basket Liners

These Easter basket liners are the exact opposite of the faux grass that used to fill our baskets. These are much more sustainable and I love that they can be monogrammed. It’s such a lovely keepsake. They come in a variety of patterns, styles, sizes, and colors to choose from.

Easter Basket Fillers

To fill the Easter baskets, I like to put in a few fun items, a book, and a few sweets. What’s an Easter basket without some chocolate? How cute are these Easter cake pops and these robins egg caramels? I know my boys will love this glow-in-the-dark soccer ball. For rainy days, they can play this basketball bingo game, and for my video game lovers, how fun is this build-your-own video game set? I think Finley will love this cute ring holder and bunny ring phone stand. She’s also getting into self-care so these cosmetic headbands and satin scrunchies are a fun addition to hold her hair back.

My Favorite Travel Essentials

I love to travel but with a large family, it can be stressful just to get there. Over the years, I’ve learned that keeping everything organized is key to successful travel days. Whether we’re driving to Michigan or flying to Florida, these travel essentials are the items I reach for when packing. One of the first things I do is to make a packing list for each family member: how many outfits we’ll each need, what type of footwear, if we’ll need toiletries, etc. It’s a lot to remember and getting it all down on a list helps make the process easier.

Bag & Luggage Travel Essentials

If it’s just Adam and I traveling somewhere together, I typically pack both of our clothes in a larger suitcase. If we’re flying, that leaves us with just our personal items to carry on. That way we’re not both lugging suitcases and juggling our other items. My friend swears by the Longchamp Le Pilage tote as one of her travel essentials. She folds it down in her carry-on and uses it when she’s done a bit of shopping on trips. That way she can check her suitcase if need be on the way back and still have a carry-on and personal item. It’s also great to use as a day bag when you’re out exploring.

Travel Organization Essentials

I know some people don’t use them but I love packing cubes, especially for the kids. I can usually fit each kiddo’s clothing in their own larger cube and then use the smaller ones for pajamas, socks, and underwear. When we get to our destination, it’s so easy to hand each one their cubes and have them put away their clothes. To help me stay organized, I love to use various pouches and bags to keep my purse and bags organized. That way I can easily transition what I need from one pouch of travel essentials to the next bag and I’m never without what I need.

On the Go Travel Essentials

Kids Travel Essentials

While my kids are a bit older now, my nieces are all under three. My brother and sister love to use the items in the travel essentials in this section to keep their little ones entertained on travel days. I love the backpacks that keep all their activities together in one place that can be zipped up when not in use. On a recent trip, I saw so many families using these ride-along suitcases at the airport. It keeps them in one place and is fun for them as well. If you’re in a hurry to catch your flight or if your kids are a bit older, we love the Mark and Graham Terminal 1 suitcases.

Traveling by Air

If we’re flying to our destination, these and the above “on the go essentials” are ones I like to keep handy. I especially love this cup holder sleeve that can fit over your suitcase to fit your water bottle, coffee, and phone. An inflatable neck pillow and cozy wrap to keep me warm on chilly plane rides are great additions and don’t take up much space. I make sure and put everything I might want nearby in ouches so that I’m not digging in my purse or carry-on when I need it.

Traveling by Car

Every summer, we travel by car to our home in Michigan. With four kids, you can imagine what our car looks like on the inside after a long drive. This vacuum and leather wipes help keep the messes at bay. If someone spills something, we can easily clean it up right away. Plus, the kids actually find it fun to use the mini vacuum. If only they were that excited to clean up at home!

Classic Wardrobe Staples

 

Over the years I have found it so important to have dependable staple wardrobe pieces that I can count on for years to come. If I am wanting to add in something that feels trendy I tend to do so with an accessory or a fun top but for the majority I keep it classic. It’s great to have a closet full of reliable wardrobe essentials that you can rework into different outfits! Some of my favorites include white sneakers, leather sandals, good quality denim, and a classic tee.

These timeless pieces are a great foundation for any outfit and stand the test of time. I tend to invest more in wardrobe essentials and spend less on trendy pieces that are only around for a season or two. You can’t go wrong with a classic, clean silhouette. What I Packed For 30A in the Offseason

We are getting ready for our favorite annual trip of the year to our happy place!  We love spending time in warmer temperatures during the cold Midwest winter months. Every winter we visit 30A in Florida. It helps boost our moods and it’s a chance for all of us to be together before Adam starts the busy planting season on the farm.  If you haven’t had a chance to read my post on 30A with kids, you can read it here! Figuring out what I pack for 30A in the offseason can be a challenge at times but it’s also so nice to get out some of my warm-weather clothing.

Since it’s still February and the offseason, the weather can sometimes be questionable early mornings and evenings. I like to pack layers and items that can mix and match. I always make sure to bring my favorite cashmere wrap and sweater to take with me to dinners on chilly evenings. During the day, I am mostly wear activewear or swimwear and then change into something nicer for dinners out in the area or a casual dinner at home. Comfortable sneakers and sandals are also a must. And then of course cozy pajamas!

My Favorite Vases

My Favorite Vases

One of my favorite ways to brighten up dark winter days is to add flowers to pretty vases. I have collected quite a few vases over the years so I’m able to add pops of color in multiple rooms: kitchen, living room, dining room, bathroom-you name it! I also love to use pitchers and hurricanes as vases. It brings a smile to my face and reminds me that warmer spring days are just around the corner. Even without flowers, these are all beautiful enough to display year-round.  Here are some of my favorite vases to add to your home and how I display them.

 

Wide-mouthed Vases

Wide-mouthed vases are best for larger bouquets. The wide opening allows for easy placement of many stems at different angles, creating a fuller, more relaxed arrangement which happens to be my favorite. They are great for large flower heads or bushy arrangements like hydrangeas where stems need more space to spread out naturally. 

Smaller Mouth Vases

Smaller-mouthed vases are best for individual stems with large blooms or a small number of delicate stems. The narrow opening of the vase helps keep the stems upright and creates a full look, even with just a few flowers. I love using them to showcase stems like sunflowers. I also love displaying smaller-mouthed vases with nothing in them. They make a beautiful statement on any interior surface.  

 

Also I recently found two really great faux flower options below! While I always prefer fresh, it is nice to have a faux floral option on hand when you are in a pinch!

Styling Our Bathroom With The Home Depot

Recently I stumbled upon some really great interior pieces from The Home Depot. I was looking for items to style the bookshelves in our bathroom that were both stylish and functional to the space. Bathroom bookshelves are great storage but it’s important to not clutter them. I love to mix in a few special items like a family photo in a frame and pretty perfume bottles. I tend to stay away from trends and stick to classic pieces with coastal touches.

Our bathroom has blue and white wallpaper so I naturally love mixing in rattans, wickers, crisp white, and touches of brass and polished nickel. They really bring a sense of warmth to the space! I found this awesome rattan stool while browsing their site and use it to stack towels or hold a tray as a place to set a glass of water or wine. The blue and white vase full of fresh hydrangeas has quickly become one of my very favorites! I’ve been using our soaking tub a lot this winter and these items have helped create a relaxing environment with a classic feel.

Keeping Your Home Organized

As the new year begins, I get the urge to re-assess our home and how things are functioning. With the holiday decorations down, it’s easier to see things with fresh eyes. With a family of six, it’s a daily struggle to keep our home organized. I find that every few months, it helps to do a cleanout and re-organization of our drawers, closets, and cabinets. It’s much easier to stay on top of things and for kids to help if everything has its place. If we’ve learned nothing from The Home Edit, it’s that there needs to be a system. I love watching their show and following along on Instagram to get new ideas for how to keep our family organized. I’ve rounded up a few of my favorites by room and hope that you find something that works for you.

Kitchen

With four growing kids, keeping our kitchen and pantry organized is a must. It makes it easier to see what we’re running low on instead of rummaging through the back of cabinets. It also makes it convenient for the kids to grab a snack when they need it and these stacking bins are perfect for that. I love these glass jars and canisters to decant everything from pasta to baking essentials. For spices, I like to use jar sets with labels and drawer dividers to keep them all organized. These five and six-piece sets take the guessing game out of which bins to use. For those that have a coffee maker that uses pods, this staggered organizer easily displays what you have on hand. The kids are always asking me for charging cords for devices and batteries for various toys and games. This box helps keep our cords from spilling out everywhere and this battery storage tray keeps everything in its own perfectly-sized spot. They can easily find what they’re looking for. For the fridge, I love these fridge organizers.  They are perfect for corraling everything together from drinks to yogurt to produce to condiments. It helps to easily see what produce is about to go bad and cuts down on our waste.

Closets and drawers

We all have a junk drawer that’s jam packed and a closet that’s so full you can’t find anything. This drawer organizer and these acacia drawer insets help corral all those loose items in a drawer. For makeup and skincare, this storage beauty drawer is perfect for your bathroom or wherever you do your beauty routines. For closets, these clear stackable drawers help you see what’s stored inside and keep everything in one stack so that your sweaters aren’t toppling over. For accessories like jewelry and sunglasses, I like to use trays like this cane tray or this lined acacia one to display them. It looks pretty and helps me make faster decisions in the mornings. A hook rail comes in handy for hanging up what you’re wearing the next day or holding those items you need to get tailored or dry cleaned. Add a rattan hamper to keep your laundry from spilling over. For shoes, I can’t get enough of these drop-front shoe boxes. I can easily find what shoes I need in a rush and they’re perfect for the kids as well. It makes it easy for them to put their shoes away instead of being scattered around the house.

Kids rooms

Keeping the kids’ rooms neat and organized is a daily challenge. From toys and books to sporting equipment, there’s never a shortage of things scattered around. It makes it easier for kids to help put their things away when there is a designated space for everything. Otherwise, it just gets thrown in the closet with the door shut. For homework and crafting sessions, a rolling cart can hold a multitude of items, including this bamboo art supply organizer. To encourage reading, I love this adorable house bookcase for little ones and this book display for when they’re older. For hair accessories, this headband organizer has been great to keep all of Finley’s headbands visible and in one place and this one can hold hair ties, pins, and clips.

Gingham storage boxes with lids can hold extra blankets and stuffed animals. If you’re short on closet space, it’s a great option to store seasonal clothes. This storage bench can also function as a spot to lay out outfits the night before and serve as a drop-off zone. For toys, this organizer with fabric bins and this open-storage toy organizer are great options. They’re both at the perfect height for kids learning to put away their toys. For a classic look, this wooden toy box reminds me of the ones we had as kids.

My favorite baskets

Baskets can be used for a variety of uses around the home. I love seagrass baskets with a lid – perfect for blankets, towels, you name it! These tulip baskets are a beautiful addition to any space and this tray basket fits perfectly underneath the coffee table or bed. You can tuck away extra items for your guests in a bedroom or fill one with art and design books under your table. These rattan bins and these Sedona baskets are perfect for a bathroom or closet.

Healthy Items to Stock Your Kitchen

 

With a large family that is always on the go, I’m always looking for easy snacks that I can stock so I’m never without healthy options. I asked Hannah from Wholesome Nutrition Co. to share her favorite items to stock up on. In case you missed it, Hannah shared her favorite tips for getting back into a routine earlier this month. 

The key to healthy eating is making sure you have healthy items available! Here are a few items I recommend keeping in your kitchen at all times. 

Freezer

  • Lightly breaded, frozen chicken tenders. I love the Perdue brand! I keep these in my freezer for quick meals like a salad, a wrap, or even just to eat plain. The nutrition is really reasonable on these compared to other chicken strips. I like to make mine in the air fryer!
  • Steamable veggies. You know the super easy bags of vegetables you can throw in the microwave for 5-6 minutes? These are really easy, healthy side items you can put with any meal. Did you know frozen vegetables have just as much nutritional value as fresh? That’s because they are frozen immediately after being harvested so they don’t lose any nutrients!
  • Frozen fruit. This is great for smoothies!

Refrigerator

  • Fresh produce. You can buy pre-cut, pre-bagged items if that’s easiest for you, or wash and cut them yourself. I highly recommend putting them in clear containers toward the front of your fridge so it doesn’t get lost in the produce drawer never to be seen again (you know what I’m talking about).
  • Greek yogurt and/or cottage cheese. Both of these have a good amount of protein when you’re in a pinch and need to add protein to your meal. Not to mention they are an excellent source of calcium. 
  • Flaxseed. This is a great way to add some omega 3’s (heart-healthy fats) and fiber into your diet. Flaxseed also helps fight inflammation. You can add this to your yogurt, smoothie, cereal, or muffins.

Pantry

  • Nutritious granola bars. I love the Kind brand, especially the Healthy Grains bars. They are 100% whole grains and gluten-free (if you need gluten-free). I also love Clif Mini Builder Bars (10 grams of protein!) and the Kodiak brand granola bars. They’re all made with fantastic ingredients and are well-balanced for a perfect snack. 
  • Whole grain bread or tortilla wraps. For bread, the Dave’s Killer brand is a great option with over 21 whole grains and it tastes great. Our family also loves the Mission whole wheat carb control tortillas. Whole grains provide loads of fiber and benefits for heart health. 
  • Beans and nuts. Okay I know they aren’t the same, but I couldn’t decide which of the two I wanted to include so I chose both! These provide a bunch of fiber as well as several beneficial minerals like magnesium, zinc, selenium, and manganese. I love the Skinny Dipped cocoa-covered almonds for a little sweet and savory snack.

Refreshing your home after the holidays

I adore the holiday season so much that when we take down our Christmas decor I get a little heartsick. I think that’s totally normal because it is such a joyous season and it has a tendency to fly by and be over before we realize it. So every year when we take down our holiday decor I make a point to refresh our home in an energizing way! January is a fun time to reset surfaces and also a time to get back to the basics of home decor.  Our home has a strong blue and white palette that feels just as fresh during the winter months as it does in summer. We have a mix of natural fiber rugs, rattan, grasscloth wallpaper, and some traditional touches.

When refreshing your home here are a few tips to keep in mind:

Clear the clutter  Put all the Christmas gifts away.  If your children received new toys for Christmas keep them organized but clear the clutter. I purchased clear bins and gave each new item its own container. This helps teach the kiddos to put their items back in their corresponding container. I keep all of my gift cards in a zipper pouch in my purse so they are easy to find and hang up all new clothing items. Sometimes this initiates a bit of a purge. My rule is if it’s broken discard it.  If you haven’t worn it in a year donate.

Reset your surfaces Resetting your surfaces gives a fresh feel to your home. After the holiday decor has been put away I like to restyle my coffee tables and bookshelves giving them a fresh new look. It’s fun to mix up your surfaces and makes your home a new start for the new year! Start by removing everything from the surface and then re-add any items you want to display. I love using coffee table books, candles, and flowers.

Add in new throw pillows An easy way to change things up is by swapping out your throw pillows! This is a no-fail easy way to give your sofa or seating a facelift! This is also a great way to bring in a little color if you are feeling the winter blues creep in! A comfy throw blanket also helps keep things cozy in your space!

Fresh Flowers When in doubt add fresh flowers or a plant! This gives your room new life! I buy fresh flowers for our home every two weeks. I put fresh water in the vase each day in an effort to make them last longer. It’s amazing how fresh flowers can elevate your mood and your space! Check your local market or florist for options!

When you feel like your home needs more than a little shushing; a new piece of furniture, a new vase, or a rug can do wonders. Here are some of my favorite interior items that will also give your space a fresh and clean feel, perfect for the new year!

Getting Back Into A Routine

I am so excited about this blog post. My daily and weekly routines have fallen to the wayside lately and I’m desperate to get them back on track. I’ve partnered with Hannah Holzum to bring us all some of her best ideas for developing a routine! Hannah is a registered dietitian nutritionist and creator of Wholesome Nutrition Co, a virtual nutrition coaching and meal planning company. Hannah has worked as a dietitian for nearly 15 years and has helped thousands of adults and kids develop healthy eating habits during that time. 

In her signature coaching program “Metabolism Makeover”, she helps busy moms get into a healthy eating routine while losing body fat/increasing muscle mass to feel and look their best. As a mom of 3 very active daughters, she understands firsthand how difficult it is to make time to eat well and exercise when you’re running kids around and trying to keep it all afloat!

The holidays are behind us and January is here! I don’t know about you, but January feels like the perfect time to get back into a routine. As a mom of three daughters and a business owner, I THRIVE on routine. 

Here are my top tips on how to create a routine:

  • Write down your top priorities that you want to focus on. Are you hoping to exercise more? Do you want to stay more organized? I find so much value in writing things down. Jot down 2-3 things you want to add to your routine in 2023. You can keep these in your phone or in a journal.
  • Now write down 1-2 action steps you’ll do for each of your top 2-3 focuses. Here’s an example: If your goal is to eat more fruits and vegetables, maybe your two action steps are:
    • I will wash and cut up all fruits and vegetables once I get home from the grocery store.
    • I will add one fruit or vegetable to all meals and snacks.
  • The final, and maybe most important tip: Check in on how you’re doing! Are you adding value to your routine? Are you doing the things you said you were going to do? Is it working well and is it positively impacting your day-to-day life?

Here are a few things I’ve added to my daily routine that helps me feel successful!

  • I wake up 45 minutes before my kids wake up to have a little quiet time. During this time, I do my bible study, go over the daily schedule, and chat with my husband about what we have going on that day. This time gives me a minute to breathe and get my thoughts organized before the chaos starts.
  • I make my bed, start a load of laundry, and make sure my surroundings are picked up. Doing this helps me feel less anxious/overwhelmed as I start my day.
  • I drink about 20 ounces of water after I have my morning coffee. Drinking enough water is hard and I have to be mindful about it. Knocking out 20 oz first thing helps the rest of my day go smoother.
