My Favorite Chopped Salad

I love a good chopped salad, and this one is my favorite that I have made. I’m gonna be honest: I am probably not doing this right from an SEO perspective. But there is nothing more annoying than getting a recipe from a blogger and having to scroll down through 500 paragraphs to get the actual recipe. This chopped salad recipe is one of my most-requested. I make it often, and you all went crazy about it when I shared it on stories. I thought I would share the recipe with you today —here it is!

My Favorite Chopped Salad

Dressing:

3 T Lemon Juice

1 T Dijon Mustard

2 T red wine vinegar

1 t. Oregano

1 t. Salt

2 t sugar or honey

1 t. minced garlic

1 cup olive oil

Whisk until emulsified

Salad:

I always use what I have in my fridge but here are my go to ingredients below:

Chopped romaine ( I like to chop it small)

Chopped bell peppers ( red, orange, yellow)

Chopped cherry tomatoes

Chopped baby cucumbers

I can drained garbanzo beans

Chopped Swiss cheese or cube a block

Sliced salami of choice

Grated Parmesan

Combine all in your favorite bowl and dress to your liking.  I always save some without dressing in a tupperware container in the fridge for lunch the next day! I store my dressing in a glass jar for up to two weeks!
